Брашното, пудрата захар и бадемовото брашно се пресяват, прибавят се яйцата и се разбива до кремообразно състояние. Охлажда се до 40 градуса и се прибавя маслото. Когато заврат се прибавя какаото и желатинът. Разбърква се добре, да няма бучки. Охлажда се до 24 градуса и се залива тортата. Сваля се от огъня.</p><p>Яйцата се разбиват със захарта и ванилията. Към сместа с меда се прибавя брашното, накрая яйцата.</p><p>Излива се в тавата от фурната, застелена с хартия за печене. Пече се в загрята до 180 гр фурна за около 15 мин, като накрая се намалява до 170.</p><p>Сироп:</p><p>160 гр захар</p><p>200 гр вода</p><p>ванилия</p><p>ром</p><p><br /></p><p>Крем:</p><p>500 гр сметана 35%</p><p>700 гр заквасена сметана</p><p>250 гр пудра захар</p><p><br /></p><p>Разбива се течната сметана с пудра захар до сгъстяване. Прибавя се заквасената сметана и се разбърква с бъркалка.</p><p><br /></p><p>Изстиналият блат се разрязва на две, всяка част още на две, но хоризонтално. Сглобява се тортата, като се нареждат 4 блата, сиропират се леко и се мажат с крем. </p><p>Или се правят пастички, като се използват два по два блата. Рецептата ми е на всеки 1,5 кг смес се слагат 100 гр полусварен ориз, 1 с.л сол, 1 с.л чубрица, черен пипер и праз на вкус. това се слага заедно разбърква се и се кипва като заври млякото се отстранява от котлона и се оставя да се охлади.
В това време кубче мая се разбърква с малко топло пр. мляко.
В друг съд се разбиват 8 яйца, настъргана кора лимон и ванилия. Когато маята е готова се пребавя към яйчената смес.
Когато млякото изстине към него се прибавя другата смес. Трябва да е в по голям съд.
Слага се капака, завива се с одеало и се оставя така цяла нощ.
На сутринта в 2 кг - 2,500 кг брашно се прибавя сместа....каза да не се шашкам че ще изглежда като пресечена супа...и се меси.
Втасва, след това се плете пак втасва отгоре се маже с белтък слага се захар и се пече в студена фурна първо на 100гр. след 10 мин се увеличават на 150 гр. Рецептата е от готвачка в стол
доза за хлебопекарната, която си изчислих аз:
150 мл прясно мляко
125 гр захар
1/4 ч олио
1/4 кубче мая или 1 суха
2 яйца
ванилия
лимонова кора
530 гр брашно
Точно какъвто трябва да бъде един козунак отвътре- на конци и влажен. Не прекалено, а както съм чувала от баби- като отхапеш да се отпечатат зъбите, ако разбирате какво имам предвид. От дозата за хлебопекарна, както се вижда даже можеше да изкарам 2 козунака, защото нямаше място накъде да втасва повече, щеше да изтече,, а искаше още малко втасване.

Докато се пекат приготвяме глазурата като се разбъркваме белтъците с пудрата захар и останалата есенция. Още горещите пряники слагаме на порции в тенджера, наливаме 2-3 лъжици глазура, затваряме с капак и разтръскваме хубаво да полепне глазура навсякъде. Вадим на хартия и оставяме да изсъхнат. </div>

След това за половин час се слага в хладилник и се пече около 13-15 мин в загрята на 150 гр фурна. Аз нямах време да охлаждам и леко се поразля формата. </div>

Замесва се и се оставя за 3-4 часа на топло да удвои обема си. При мен на 30 градуса се случи това за 3,5 часа.<br />

Добавя се 1 яйце, 70 гр захар, 80 гр масло, 1/2 ч.л сол, 300 гр брашно. Омесва се гладко тесто, което също се оставя да удвои обема си. При мен беше за 4 часа при 30 градуса.<br />
Разстила се на правоъгълник, маже се с разтопено масло 70 гр и се поръсва със смес от 2 ч.л канела и 150 гр кафява захар. Завиваме на руло, режем с конец на парчета и нареждаме в тавичка с разреза нагоре.<br />
